Aligot – yum yum

Aligot is a wonderful winter treat!  It’s a wonderful, silky even unctuous purée of potatoes, cream and garlic mixed with fresh tomme, a hard cheese produced in many rural regions of France.  Originally a festive family meal often served with sausages it’s becoming more and more difficult to find in restaurants.  Sometimes there’s even a bit of a show!  If you’re in France during the winter and find it on the menu, give it serious consideration!
