French Nod to Thanksgiving

The French don’t really ‘get’ Thanksgiving as Elaine Sciolino noted in her recent piece in the NYTimes.  How could they?  They don’t have the 200 year history of that holiday ()but they do have a much longer culinary tradition.  But increasingly they’ve found ways to nod to our Thanksgiving traditions.  As examples – a bread by noted baker Poilaîne with a turkey crafted in its center and a pumpkin tart by Sébastien Gaudard at Pâtisserie des Martyrs (available until November 30).  Both by special order only.
